Apple Pudding Cake with Cream Cheese Frosting

This warmly spiced Apple Pudding Cake bakes up soft and pudding-like with apples, dates, and raisins throughout. A layer of cream cheese frosting adds a cool, tangy finish that pulls it all together.

  • Vegetable oil
  • Eggs
  • All-purpose flour
  • Baking soda
  • Salt
  • Cinnamon – You could also try adding a pinch of nutmeg or allspice to warm things up. Pumpkin pie spice would also work.
  • Vanilla extract
  • Apples – Any baking apple is fine. Pears also work if they’re firm and not super juicy.
  • Dates and raisins – Instead of dates or raisins, try chopped dried apricots, figs, cranberries, or cherries. Or add chopped toasted walnuts or pecans. Keep the volume the same, though.
  • Cream cheese frosting – Cream cheese frosting is my favorite, but you could also do a simple vanilla glaze or even a dusting of powdered sugar to keep it lighter.

Instructions

Step 1: In a large bowl, beat together the sugar, oil, and eggs until well combined.

Step 2: In a separate bowl, sift together the flour, baking soda, salt, and cinnamon. Set aside a small portion of the flour mixture and use it to coat the dates and raisins.

Step 3: Gradually add the remaining flour mixture to the sugar mixture, blending until smooth. Stir in the vanilla, apples, and the flour-coated dates and raisins.

Step 4: Pour the batter into the prepared pan and bake for about 45 minutes, or until a toothpick inserted in the center comes out clean.

Step 5: Cool completely, then frost with your favorite icing.

  • Aim for evenly sized apple pieces for even baking.
  • Don’t skip coating the dates and raisins since it helps keep them from sinking.
