These are the dinner recipes our readers saved the most this May, from zesty pastas to easy one-pan meals and the first grilling recipes of the season!





May is one of my favorite months to cook. It’s a delicious mashup of spring and summer, with veggies like asparagus, peas, fresh herbs, and radishes all over the farmers market and tomatoes and zucchini on their way. We have the occasional chilly night or two, where a cozy bowl of asparagus soup might hit the spot, but we also kick off grilling season over Memorial Day weekend, ushering in months of cookouts, picnics, and generally eating outside as often as possible.

Our most-saved May dinner recipes reflect all of that. This month, our readers loved produce-packed weeknight meals like pasta primavera and salad pizza as well as grill-able veggie burgers and picnic-perfect wraps. This one-pot lemon orzo is quickly becoming a reader favorite dinner—and it’s one of my new favorites too. The recipe calls for peas, but you can toss in all sorts of green veggies. I love using chopped asparagus or spinach, for example. I also often add chickpeas for a nice protein boost. For those with kiddos: My son Ollie loves this one, and several readers have shared that it was a hit with their kids too!

A 5-minute stir fry sauce packs this colorful stir fry with sweet and savory flavor. It’s no surprise that it was one of our most-saved May dinner recipes, because it’s a great way to use spring veggies like snap peas, carrots, scallions, and mushrooms. Asparagus or turnips would be delicious here too! Feel free to add baked tofu or tempeh for extra protein, and serve with rice.

This 30-minute pasta is practically May on a plate! It’s chock-full of late spring and early summer vegetables like asparagus, summer squash, cherry tomatoes, peas, and onions. A little fresh tarragon, basil, and pecorino cheese fill this simple recipe with unexpected depth of flavor.

I first shared this asparagus soup recipe back in 2019, and I re-tested and updated it this spring. I’m in love with the updated version, and I’m so happy that so many of you have made (and saved) and loved it too! It’s a delicious, comforting recipe for a cool spring night. Leeks add onion-y depth of flavor, and blended asparagus and peas make it lightly creamy. If you’d like it to be even creamier, feel free to add a splash of heavy cream in the final minutes of cooking.

This Middle Eastern and North African dish is traditionally served at breakfast, but it also makes a great one-pan dinner. Eggs poach directly in a spiced tomato and red pepper sauce. It’s filling, flavorful, and pretty darn quick. Don’t forget the pita for serving!

Clearly, Love & Lemons readers love a Caesar salad, because so many of you saved these wraps as soon as I shared them this spring. They’re a great packable lunch or light dinner for spring and summer, stuffed with creamy avocado, chickpeas, and crisp green veggies. A homemade dressing adds that rich, tangy Caesar flavor. Choose from my traditional mayo-based Caesar dressing or this creamy cashew vegan Caesar dressing!

Our cooking club pick of the month, this 20-minute noodle salad is tossed in a light sesame dressing and features spring veggies like avocado, radishes, and peas. It’s endlessly customizable, so feel free to make it your own. I skipped the avocado and added cucumber and chili crisp for a picnic just last week. L&L readers have added basil, cilantro, mushrooms, tofu, and more!

These smoky, savory patties are the easiest veggie burgers you can make from scratch! They come together in one bowl in under 20 minutes and cook up perfectly on the grill. I made them for a Memorial Day cookout, and they’ll be on my BBQ menus all summer long. Serve them with homemade chipotle sauce and all the fixings.

This recipe is just what it sounds like: salad on top of pizza! I top a crispy, cheesy pizza crust with a zesty combination of arugula, radicchio, pepperoncini, red onion, and Parmesan cheese. A red wine vinaigrette adds a nice acidity to cut through the rich crust and cheese. Fresh and fun, it’s my favorite homemade pizza to make throughout the spring and summer.

Falafel

A falafel wrap stuffed with fresh herbs, crisp veggies, and pickled onions is one of my favorite spring dinners. I’m assuming you feel the same, judging by how many of you saved this recipe this May! These crispy falafel balls are baked, not fried, and filled with parsley and cilantro for fresh flavor. They’re great for meal prep. Cook off a batch on the weekend, then freeze until you’re ready to use them. Just pop them in the air fryer or oven to reheat!
