Pour into popsicle moulds, insert sticks, freeze for at least four hours. That is it. These don’t last long here.
The rum prevents the popsicles from freezing rock solid. They stay slightly soft, which means you can bite into them without waiting for them to thaw. The mint blends in completely but you taste it on every lick, herbal and cool behind the strawberry and lime.

Blend until completely smooth
Any chunks of strawberry or mint leaf will freeze into hard, icy bits. Blend for at least thirty seconds, longer if your blender is weak. The mixture should be a uniform pink liquid.
