I take my bubble tea to the next level with this creamy boba smoothie recipe. I combine my chewy tapioca pearls with a blend of fruit and plant-based milk for a smoothie with a sweet little bite in every sip. Best of all, it comes together in just 16 minutes and uses wholesome ingredients.

Ever since I learned how to make milk tea at home, I have taken my variations to the next level, and this boba smoothie is my latest obsession. This is a playful way to enjoy smoothies with added texture, flavor, and visual appeal. If you enjoy smoothies and bubble tea, you will love the way the thick, creamy base pairs with the chewy tapioca pearls.

I started making boba smoothies at home after my husband mistook my taro milk tea for a berry smoothie. After playing around with a few flavors and textures, these drinks became a new and exciting favorite in our house. This recipe works well with fresh, silky smoothies as well as the frozen variety, and can even work in a dairy-free smoothie.

This boba smoothie recipe combines wholesome ingredients with a fun texture, which makes it exciting, and as a mom, I love that for my kids. I also love that I control the ingredients, which means, unlike most commercial bubble teas and smoothies, there are no additives, preservatives, or large amounts of refined sugar. When I am in control, I can make these smoothies as nutritious or as indulgent as I like, and know that either way, my kids are satisfied. 

Boba smoothies work thanks to 2 separate techniques used for each component. I cook the tapioca pearls until they are perfectly chewy, and keep them in a syrup until needed to prevent them from firming up. Then I blend my smoothie ingredients into a velvety finish, and layer it in a glass along with my tapioca. 

After realizing that my kids would drink just about anything with tapioca pearls at the bottom, I realized that adding them to smoothies was my chance to get more veggies into their diets. Boba tea only lends itself to certain flavors, and usually in much smaller quantities, but I could pack a smoothie with any fruit or vegetable I wanted.

My kids were always less keen on broccoli smoothies, so I decided to sneak some into the blender along with oatmilk, baby spinach, bananas, dates, avocado, and chia seeds. Talk about a superfood smoothie! And they loved it. Next time you need to hide vegetables, blend them up and make a boba smoothie.

🥘 Ingredients

For this boba smoothie, I use a simple recipe for the tapioca pearls and then customize my smoothie base to suit whatever ingredients I have on hand. Below, I have also included the ingredients for 4 different smoothie varieties; the exact measurements can be found on the recipe card.

For the pearls

Tapioca pearls: I cook these to create that classic chewy texture.

Brown sugar: I mix this with the pearls for a light sweetness and for color. 

Components for a basic smoothie base

Fresh fruit: I like using fresh fruit for a vibrant base and bold flavor.

Frozen fruit: I rely on frozen fruit to create a thick, creamy texture without needing ice.

Yogurt: This adds a creaminess and subtle sweetness, if I use flavored. Sometimes I swap it out for vegan yogurt. 

Liquid: I use almond milk or coconut water to help blend everything into a smooth consistency.

Flavoring: Ingredients like maple syrup or vanilla extract enhance and balance the overall taste of the smoothie. 

Boba smoothie 4 ways

Strawberry banana smoothie: For this version, I use strawberries, frozen banana, unsweetened coconut yogurt, unsweetened almond milk, and maple syrup

Blueberry smoothie: I use frozen blueberries, frozen banana, maple syrup, unsweetened almond milk, chia seeds, and almond butter to create this smoothie.

Honeydew melon smoothie: I blend honeydew melon, vanilla extract, unsweetened coconut yogurt, and frozen pineapple

Mango smoothie: Frozen mango, frozen pineapple, coconut water, unsweetened almond milk, and maple syrup make up this mango smoothie.

🔪 How To Make

Make this boba smoothie in two separate parts, before combining for the delicious end product. This is what I do:

Cook tapioca pearls: First, I bring a pot of water to a boil, add the tapioca pearls, lower the heat,  and let them simmer for 5-6 minutes until soft and chewy.

Strain and mix with sugar: I strain the pearls and add them to a small bowl, and stir the brown sugar through while the pearls are still hot. Then I set the bowl aside and allow it to cool.

Blend smoothie: Next, I prepare the milk tea smoothie by adding all the ingredients to a high-speed blender and blending until completely smooth.

Add pearls: I divide the cooked tapioca pearls between 2 glasses and top with the smoothie.

Serve: I serve this boba smoothie immediately and enjoy it!

My #1 Secret Tip for this boba smoothie recipe is to cook the tapioca pearls shortly before serving. I make sure I have all my smoothie ingredients prepared and ready to go. This way, my pearls do not stand out for too long, at risk of becoming hard. 

Other Tips To Keep In Mind:

  • Do not overcook: I watch the pearls closely as they cook, making sure they do not become too soft instead of chewy.
  • Rinse pearls lightly: I rinse the pearls lightly in warm water to remove any excess starch, making sure to keep them warm before adding the sugar.
  • Blend well: I blend the smoothie until it is completely smooth, allowing for a good contrast of textures with the pearls.
  • Use a bubble tea straw: Serve these smoothies with boba straws that are large enough for the tapioca pearls to fit through. 

📖 Variations

While you can play around with the ingredients for the boba smoothies, these are a few variations that I have tried and enjoyed.

Dairy-free smoothie: For a fruit-only smoothie, I use frozen banana for a creamy base and add coconut water as the liquid. I like making a pineapple and raspberry boba smoothie this way. 

Protein boost: I add a scoop of vanilla vegan protein powder into my smoothie ingredients and blend it up for an energizing drink. This is my favorite variation that I take along to school sports events. 

Boba strawberry milkshake: I turn this drink into a sweet treat by swapping out the yogurt for vanilla ice cream and blending it with fresh strawberries and almond milk. I top it with some vegan whipped cream and a sweet drizzle like my strawberry simple syrup.

🍽 Serving Suggestions

There really are no limits when it comes to boba smoothies. If you enjoy frozen and brightly colored fruit smoothies, I recommend layering my dragon fruit smoothie over some tapioca pearls. Or for a creamier drink, try it with my mango pineapple banana smoothie, which tastes like a tropical holiday.

Last year, I had some time in the kitchen and a lot of dessert ingredients at my disposal, and decided to make a truly lavish boba smoothie. I blended my vegan homemade chocolate milk with a frozen banana, and swirled my healthy vegan chocolate syrup and my vegan caramel sauce around the glass before adding my pearls and smoothie mixture. It was so decadent, I swore to only make it once a year. Ha! 

🧊 Storing And ♨️ Reheating

Refrigeration: I store the smoothie in an airtight container for up to 1 day, but keep the pearls separate if possible.

Freezing: I freeze the smoothie mixture in ice cube trays and blend with a splash of almond milk when I am ready to use it.

Reheating: This recipe is best served cold; no reheating required.

How can I get my tapioca soft if it has become hard?

This happens when the pearls cool down or sit out for too long without moisture. I keep mine covered in brown sugar to avoid this. If they have firmed up, I add a small splash of warm water to the pearls and stir gently to refresh them and bring back the chewy texture.

How do I prevent the pearls from clumping together in the glass?

After cooking, I stir the pearls with brown sugar while they are still warm, which helps separate them. When assembling the drink, I give the pearls a quick stir to loosen them up before adding them to the glass. 

What is the difference between white and black tapioca pearls, and does it change the recipe?

Both of these are made from cassava starch and require the same cooking process. The main difference is in the flavor. White pearls are tasteless on their own, which is why I use brown sugar to color them and add a caramel-like sweetness. Black tapioca pearls are already sweetened during production and have a richer flavor similar to molasses. If you use black pearls, skip the sugar entirely.
