- Ingredient note: I like this recipe best with full-fat cottage cheese (5%+), as it has the richest flavor. 2% works too. I’d avoid fat-free cottage cheese, which will create a flatter flavor and less creamy texture.
2. Pulse until smooth and creamy. If the cheese doesn’t look smooth right away, keep pulsing! Don’t hesitate to process for a minute or more to get it completely smooth.
