Vegan jalapeno poppers are one of my favorite appetizers when I want something with a bit of heat and a lot of cheese. They remind me of a jalapeno artichoke dip, where there is just enough creaminess to offset the peppers. If you like having snacky meals for dinner, these jalapeno poppers are great. I have enjoyed them for quite a few of my solo dinners.

I originally started making this recipe after bringing a dairy-free appetizer to a neighborhood football party, and realizing most store-bought versions were not plant-based. Jalapenos: I slice fresh jalapenos in half lengthwise so they become the perfect vessel for the filling.

Vegan sausage: I use flavorful vegan sausage for spicy flavor throughout. 

Vegan queso blanco: This keeps the filling rich and smooth while balancing out the heat from the peppers.

Breadcrumbs: I top the poppers with breadcrumbs for a crispy golden finish after baking. 

Smoked paprika: Smoked paprika adds a signature warmth and smoky flavor to the breadcrumb topping.

I prepare these vegan jalapeno poppers in stages so the filling stays creamy as the topping crisps. This is how I make them:

Prepare jalapenos: First, I slice the jalapenos in half lengthwise and remove the seeds and membranes carefully. 

Chop sausage: Next, I chop the vegan sausage into small pieces so it mixes evenly into the filling. 

Mix breadcrumbs: In a separate bowl, I combine the breadcrumbs, smoked paprika, salt, and lemon juice until evenly coated.

Make filling: Then, I stir the vegan sausage and queso together until creamy and fully combined.

Fill peppers: I spoon the filling into each jalapeno half, then top everything generously with the breadcrumb mixture.

Bake or grill: I either grill for 8-10 minutes, or if baking, I place the peppers on a parchment-lined cookie sheet and bake at 425F for 10-15 minutes. I check at the 10-minute mark for brownness.

Serve: Finally, I drizzle extra queso over the top and serve the poppers warm with dips or toppings.

My #1 Secret Tip for this vegan jalapeno popper recipe is to avoid overfilling the peppers. Whenever I add too much filling, it usually spills out while baking and prevents the breadcrumb topping from crisping up properly.

  • Wear gloves: I always wear gloves while handling jalapenos to avoid chili burn from the oils in the pepper. I keep them on throughout the preparation and stuffing process. Which is why it is good to get all the other components prepared and ready before working with jalapenos.
  • Cover board: Unless you have a dedicated chili board, I suggest covering your chopping board in plastic wrap before slicing your jalapenos on it. 
  • Flatten bottoms: I slice a tiny piece from the bottom to help the peppers stay stable on the baking tray. 
  • Broil briefly: I broil the pepper for the final minute when I want an extra golden breadcrumb layer.
  • Chop finely: Smaller sausage pieces mix and distribute into the queso better, and make the filling easier to spoon. 
  • Watch peppers: I remove the poppers once the jalapenos start browning and soften slightly, but still keep their shape and texture.

These are a few of the ways I change up these vegan jalapeno poppers depending on the occasion, spice level, or toppings I have available: 

Buffalo and blue cheese: I add 2-3 teaspoons of buffalo hot sauce to the stuffing mixture, and replace 1/4 of the queso blanco with vegan blue cheese. I love serving this on game day with an extra side of vegan buffalo sauce. 

Corn filling: For a Cajun spin, I mix a dash of Creole seasoning with the queso, along with a 1/4 cup of Chipotle corn salsa and diced red onion. This adds a new level of spice and heat, which my husband loves. 

Chipotle version: I use Chipotle-flavored vegan sausage when I want smokier poppers for cookouts. I always make this version when I know my guests like their food on the extra spicy side.

🍽 Serving Suggestions

These vegan jalapeno poppers are great for parties and are certain to satisfy all your guests. I recommend serving them with a side of sour cream to combat the heat for any sensitive palates. They also do well with other Tex-Mex sides like a classic bowl of baked corn tortilla chips and edamame guacamole, or even some vegan taquitos.

For The Smoky Lemon Breadcrumbs

  • Slice jalapenos in half length wise, to make 16 halves, and take out the seeds. If you are not placing them on a grill with a grate and baking (or grilling) on a flat surface, you may want to slice a small flat edge on the bottom so they don’t roll sideways. On the grill, they may not need this because they will fit in-between the rungs.

  • Chop sausages into small pieces, place in a small bowl.

  • Mix all breadcrumb ingredients in a bowl except the lemon juice, until combined. Add lemon juice and mix well to break up clumps.

  • Put ½ cup queso blanco into the bowl with the chopped sausage. Mix well.

  • Spoon about 1 to 1 ½ tablespoons sausage mixture into the cut jalapenos.

  • Top with about 1 ½ teaspoons breadcrumbs.

  • Grill or bake. If grilling make sure to spray oil on any surfaces that are not nonstick in case of sticking. If on a grill, they should be ready in about 8-10 minutes but check and remove when the jalapenos are browning. The sausage is precooked. If baking, place on a parchment lined cookie sheet and bake at 425 F (220 C) for about 10-15 minutes, but check at the 10 minute mark for brownness. You can also broil for the last minute to get the tops nice and crisp.

  • Serve with more queso blanco drizzle on top! Be careful, they have a kick!
