Everything in this tofu sandwich recipe works together to create layers of flavor and texture. This is what I use:


Firm tofu: I marinate slices before baking them, which gives the sandwich a tasty, protein-rich layer.
Marinade: I mix tamari, maple syrup, lime juice, garlic powder, liquid smoke, ground black pepper, and sometimes hot sauce to create a marinade that is savory, sweet, and a tad smoky.
Bread: I use my favorite bread and make sure it is sturdy enough to hold all the toppings and dressing.
Thousand Island dressing: This keeps the sandwich from tasting dry while also adding a sweet and tangy flavor. You could use store-bought, but I like making my own dairy-free Thousand Island dressing.

Once the tofu is baked, my tofu sandwich recipe is quick and easy to make. This is how I ensure the sandwiches are full of flavor every time:
Prepare the tofu: I start by preheating the oven to 400F. Then I slice my tofu lengthwise into squares.

Soak in marinade: In a small bowl, I whisk together the tamari, maple syrup, lime juice, garlic powder, liquid smoke, black pepper, and hot sauce if using. I pour this over the tofu slices in a shallow container, making sure each side is coated, then refrigerate.

Bake tofu: Once the tofu is done marinating, I arrange the squares on a parchment-lined baking sheet and bake for 15 minutes before flipping and baking for another 5-7 minutes until the edges are crisp.

📖 Variations
One of my favorite things about this tofu sandwich recipe is how easy it is to customize depending on what I am craving or what I have in the refrigerator. These are some of my favorite variations that I recommend trying:
Spicy filling: When I want some extra heat, I add sliced jalapenos and swap the Thousand Island dressing for spicy vegan sriracha mayo. Sometimes I make this more of a Tex-Mex version, and add a teaspoon of homemade taco seasoning to the marinade, and replace the veggies with Mexican coleslaw with cilantro lime dressing.
Mediterranean style: I replace the dressing with a spread of Greek hummus, and top the sandwich with cucumbers, roasted pepper, spinach, olives, sundried tomatoes, sliced red onion, and a drizzle of Greek salad dressing. My kids love this in a giant pita.
Loaded veggies: Sometimes I load this sandwich with kale, arugula, roasted peppers, vegan mushroom bacon, pickles, or even slices of fresh Granny Smith apple. This gives the sandwich loads more crunch and flavor, which my husband loves.

Freezing: I do not recommend storing assembled sandwiches in the freezer as the vegetables become soft after thawing. I freeze the tofu squares in a freezer-safe container for up to 3 months.
Reheating: This sandwich does not require reheating once it is fully assembled, but the tofu can be reheated in a 350F to restore its crispness.

Yes, you can! I arrange the marinated tofu slices in a single layer and air fry them at 400F for 10-12 minutes, flipping halfway through. If your air fryer is on the smaller side, I definitely recommend cooking the tofu in batches instead of overcrowding the basket. Also, be sure to keep an eye on the edges, as cooking time may vary depending on the model of the air fryer.
I wrap the block of tofu in a clean kitchen towel or several layers of paper towels, place it on a plate or cutting board, then set another plate or baking sheet on top. I weigh it down with a few heavy cookbooks, a cast-iron skillet, or canned goods, and let it press for 20-30 minutes.
I recommend choosing a sturdy bread that can support the marinated tofu and fresh topping without falling apart. Sourdough, whole wheat, multigrain, ciabatta, sandwich rolls, or thick-cut country bread all work well, especially if lightly toasted. I avoid very soft white sandwich bread unless it has been cut into thick slices and toasted. Delicate bread like brioche and potato bread are also less ideal for this recipe.

Preheat the oven to 400 F/ 205 C

Carefully slice the tofu into ¼ inch thick slices making 8 squares. You are slicing it length wise to make squares not height wise to make little rectangles. See the photos in the post. Place them on a plate or wide container.

Mixthe Tamari, maple, lime juice, garlic powder, liquid smoke, pepper and hot sauce in a bowl and whisk well.

Coat the tofu slices with the mixture on both sides. You can let them marinate for a few minutes as you clean up and/or prep the ingredients you will serve with, but it isn’t necessary. You can even marinate overnight for a really deep flavor.

Lay them out on a parchment lined baking sheet.

Bake for 15 minutes. Flip and bake another 5-7 minutes, depending on how crispy you want them. Be careful not to burn the tofu slices.

Allow to cool as you assemble your toppings. Build the sandwiches by spreading the sauce on the slices of bread. Then add lettuce, tomato, tofu slices (I to 2 per sandwich), avocado, cucumber and sprouts. You can do any order you prefer, but I like the tofu nestled in the middle of everything.
