I’ve developed meal prep recipes for more than a decade, and chicken salad is one of the most reliable options because it’s easy to portion, stores well, and requires no reheating. For this high protein buffalo chicken salad, I use cottage cheese instead of a mayo heavy dressing to increase the protein while keeping the texture creamy. Chicken, carrots, celery, dill, and green onion give it plenty of texture and flavor. Each serving has 20+ grams of protein for less than 200 calories.

Ingredients

  • Chicken: for this recipe you will use already cooked, chopped chicken. Your options are endless, use rotisserie chicken, leftover chicken, etc.
  • Vegetables and Herbs: carrots, celery, green onion and fresh dill.
  • Cottage Cheese: you will use whipped or blended cottage cheese for this recipe. Don’t worry, if you don’t enjoy cottage cheese you can’t taste it, it just creates a light texture with added protein.
  • Mayonnaise: you can use all cottage cheese if you prefer, but I find the blend really gave the best flavor.
  • Ranch: You will need dry ranch seasoning, not salad dressing for this recipe. You can use store bought or use this homemade ranch seasoning blend.
  • Buffalo Sauce: use your favorite brand and use my measurement as a jumping off point, add more or less based on your personal preference.

How to Make Buffalo Chicken Salad

  1. Using an immersion blender or food processor to blend the cottage cheese. You are looking for a completely smooth, fluffy texture.
  2. Combine the remaining ingredients until everything is incorporated nicely.
  3. Taste test and adjust the buffalo sauce and fresh dill as needed.

Storage

  • Refrigerator: Store this chicken salad in an airtight container in the refrigerator up to 4 days.
  • Freezer: I do not recommend freezing this recipe.

Serving:

This doesn’t have to be enjoyed the same way all week. Here are some of my favorite ways to have it:

  • Serve it in a tortilla with crisp lettuce, pickled red onion, and blue cheese.
  • Chicken salad alongside butter lettuce, dill pickles and additional buffalo sauce.
  • Serve with crackers, carrots and celery in a bento style box.
  • Serve with pita, or sourdough bread.

Ingredients

  • 4 cups cooked chopped chicken
  • 1 cup chopped celery
  • ¾ cup shredded carrot
  • cup whipped cottage cheese
  • ¼ cup mayonnaise
  • ¼ cup green onions finely chopped
  • 1 tablespoon ranch seasoning
  • 1 tablespoon buffalo sauce or more to taste
  • 1 tablespoon finely minced dill

Instructions

  • *For this recipe you will need whipped cottage cheese. To do this you can add cottage cheese to a blender or food processor and blend until smooth and fluffy. Alternatively, you can use an immersion blender.
  • Combine all of the ingredients until well incorporated.
  • Taste and adjust the buffalo sauce and fresh dill to taste.
