Make next week easier with a protein-packed weekly meal plan featuring easy family favorites including pork tacos, a veggie skillet lasagna, cheeseburger bowls, and my favorite fall egg muffins. Plus make a grocery list that’s already done for you.
This is one of those weeks where I really don’t want to think about dinner at 5 p.m. We just finished fall break and our schedules are honestly packed.
So next week’s plan is all about efficiency and some strategic meal prep. There’s a slow cooker dinner on Sunday, skillet lasagna on Monday, a super fast cheeseburger bowl in the middle of the week, and pork tacos heading into the weekend.
I’m also always repeat a few breakfasts and lunches on purpose. I would much rather prep something once and eat it a few times than make seven completely different breakfasts just for the sake of variety.
Here are four recipes I’m especially excited about this week — plus exactly how I’d make the whole plan a little easier.
Chunky Monkey Banana Peanut Butter Yogurt Bowl
This is my kind of weekday breakfast: five minutes, 30 grams of protein, and it actually feels like something I want to eat. It’s also on the plan Monday, Wednesday, and Friday this week, which is very intentional. Buy the ingredients once, keep them together, and breakfast is basically on autopilot.
Add some fiber: I’m purposefully focused on fiber right now, so I will be adding 2 tbsp chia seeds, 1/4 cup Catalina Crunch, and 1/2 cup raspberries to my bowls for a bonus 19g of fiber and it’s still under 500 calories.

Cheeseburger Bowls

I put this one right in the middle of the week because it only takes about 20 minutes and still feels like a real dinner. It’s basically everything I want on a cheeseburger piled into a big salad — beef, cheese, pickles, tomatoes, and all the burger toppings.
Picky eater tip: If salads aren’t happening at your house yet, don’t make another dinner. I just keep some of the beef and toppings separate and let everyone build their own plate. Add a bun for anyone who wants an actual burger.

Pork Tacos

These are doing double duty this week. They’re Thursday’s dinner, and the extra pork gets used again for lunch Friday, which is exactly the kind of planned leftover I want in a meal plan.
I also love a build-your-own dinner toward the end of the week. Put out tortillas and whatever toppings you have, and everyone can make their tacos the way they want. No making three versions of dinner.
Swap the protein: Depending on what’s on sale at your grocery store, I make this recipe with chicken thighs all the time. They come out just as delicious and are a solid option if pork is expensive.

Skillet Vegetable Lasagna

Monday gets lasagna, but not the kind that requires an entire Sunday afternoon. This one cooks right in a skillet with spinach, zucchini, mushrooms, plenty of sauce, and cheese.
On the High Protein plan, we’re adding chicken sausage to make it more filling. This is also the dinner I’d be most likely to get a head start on Sunday so Monday night takes almost no thought.

Want the Shopping List Too?
This might honestly be my favorite part of the meal plans. Once I decide what we’re eating, I really don’t want to open a bunch of recipes, adjust everything for my family, and then build a grocery list ingredient by ingredient.
The meal planner does that part automatically based on the recipes and serving sizes you choose.
✓ Swap a meal and your grocery list changes with it.
✓ Adjust the servings for your family.
✓ Check off anything you already have at home.
✓ Add your own groceries to the same list.

How I’m Making This Week Easier
I’m definitely not spending my whole Sunday meal prepping, but there are a few things on this week’s plan that are worth doing ahead. I
Get ahead
Monday’s skillet lasagna is the obvious one to knock out early. I’d also marinate Tuesday’s lemon oregano chicken while I’m already in the kitchen and prep the beef and toppings for Wednesday’s cheeseburger salads. Three little jobs ahead of time = three much easier weeknights. Should take about 45 minutes max.
Grocery store shortcuts
This is a great week to let the grocery store do some of the work. Grab packaged egg bites instead of making them, microwave rice or quinoa for the Coconut Basil Chicken, bagged shredded cabbage for the taco slaw, and a store-bought burger or creamy cilantro dressing if you don’t feel like homemade sauce. You can also use frozen chicken strips and veggie fries for dinner on Saturday.
Save money
Before I shop, I’m checking the freezer and looking for sales. Use any ground meat for the cheeseburger salad, use chicken thighs in the slow cooker meal, skillet chicken, or pork tacos. Use frozen shrimp or swap in fish for Friday’s meal.
Want More Protein or Fewer Carbs?
The Healthy Plan is where most members start, but you can switch things up depending on what you need that week. One membership gives you access to all of our plans.
High Protein
40g+ Protein
Meals with at least 40 grams of protein and under 500 calories per meal.
Low Carb
Fewer Carbs
Our approach to low carb is different than most; we cut out major carbs like pasta, bread, rice, beans, or oatmeal but still include things like fruit, higher-carb veggies like squash, and lower carb legumes like lupini and soy beans.
No matter which plan you choose, you can still swap individual meals and adjust servings to make it work for your family.
