  • Cottage cheese – I like using full-fat cottage cheese, which creates a rich, tender crust.
  • 00 flour – This is the traditional flour used for an authentic pizza crust, but all-purpose flour works great too.
  • Baking powder – For lift, instead of yeast.
  • Salt 
  • Olive oil – Helps the crust get browned and crisp.

How to Make Cottage Cheese Pizza Crust

Making this pizza crust is a cinch! Here’s what you’ll need to do.

  • Blend the cottage cheese. Add cottage cheese to a blender or food processor and blend until smooth.
  • Mix the dough. Combine the flour, baking powder, salt, and the blended cottage cheese. Knead until smooth.
  • Roll the crust. Roll the dough into an 11-inch circle, about 1/2-inch thick.
  • Bake. Place on a parchment-lined baking sheet and brush the edges with olive oil. Bake at 425°F for 8 minutes, until the edges are golden.

  • Add more flour if needed. If it’s summertime or humid in your kitchen, you may need to sprinkle a little more flour into the dough as you knead it. You’ll know because it will feel sticky.
  • Add herbs or spices to the dough. Mix in dried oregano, basil, Italian seasoning, or garlic powder for a flavor-infused crust.
  • Make it gluten-free. Substitute a 1:1 gluten-free flour blend. The texture will be different, but the recipe will still work!

How to Use This Pizza Crust

Once you’ve baked the crust for 8 minutes, it’s ready to be topped! I love adding sauce, cheese, and pepperoni for classic pizza night vibes, but you can really add anything you like. Just don’t overdo it—too many toppings will make your crust soggy.

After topping the pizza, return it to the oven just long enough to melt the cheese and toast any toppings.

Storage and Reheating

  • Refrigerator: Store the baked cottage cheese pizza crust tightly wrapped in the fridge to get a head start on your pizza making. It will last for up to 4 days.

Description

This high-protein cottage cheese pizza crust is chewy, crisp on the edges, and so delicious. It’s also super easy to make, with no yeast!



  1. Preheat oven to 425°F.
  2. Add cottage cheese to a blender or food processor, blend until smooth and creamy.
  3. To a medium bowl add flour, baking powder, salt and the blended cottage cheese. Using your hands, begin to incorporate flour with the cottage cheese. Once it starts to look more like a ball transfer your dough to a flour surface.
  4. Knead the dough between 5-8 times, basically until the dough is no longer sticky and the texture is smooth. (Note: if you dough is sticky add flour little by little)
  5. Once your dough is ready, using a rolling pin, roll dough into a circle that is about 1/2″ thick and 11″ in diameter. It doesn’t need to be perfect just get it close.
  6. Line a large baking sheet with parchment paper. Transfer your pizza to the prepared baking sheet.
  7. Brush the outside of the pizza crust with olive oil.
  8. Place in oven and bake for 8 minutes.
