Cottage cheese, y’all. Between my Cottage Cheese Egg Bites and Cottage Cheese Pizza Crust, I just can’t get enough. This bowl hits all the right notes too, with warmly spiced roasted sweet potatoes, tomato-y taco-seasoned ground beef, creamy protein-packed cottage cheese, and buttery avocado slices, all finished with a drizzle of hot honey. Hello, delicious! I love that these hot honey ground beef bowls are satisfying and healthy, but also something that I legit look forward to eating.

Why These Ground Beef Bowls Are My New Favorite Lunch

I have been loving these hot honey ground beef bowls for meal prep lunches. There’s a reason they’ve gone viral!

  • Big, bold flavor. Both the sweet potatoes and ground beef are seasoned with warm spices, making them the perfect balance for the mild cottage cheese and avocado.
  • Weeknight-friendly. If you cook the beef while the sweet potatoes are in the oven, the whole meal is done in just over 30 minutes.
  • Protein-packed. Ground beef and cottage cheese are both awesome protein sources to make this a hearty, satisfying meal.
  • Great for meal prep. Everything stores and reheats well, so you can enjoy it all week long. Love that!

What You’ll Need

The ingredients for these hot honey ground beef bowls are super simple! Scroll down to the recipe card to find the ingredient quantities and recipe instructions.

  • Ground beef – If you use ground beef with a higher percentage of fat, you may need to drain off some of the grease.
  • Taco seasoning – I like to use Siete taco seasoning.
  • Tomato sauce – No-salt added helps keep the sodium in check.
  • Avocado oil – Or another high smoke point oil.
  • Sweet potatoes – If you’d like, you could swap in cubes of butternut squash, which has fewer carbs.
  • Seasonings – Salt, cinnamon, garlic powder, black pepper, and smoked paprika.
  • Cottage cheese – Not a fan of the curds? Blend it first!
  • Avocados – Buy ripe avocados if you’re making the bowls right away, or firm avocados if you’re making them later in the week.
  • Hot Honey – You can make this from scratch using raw honey and sriracha or you can just buy hot honey from the grocery store for an “easy button”. There are plenty of brands, my favorite is Nate’s.

How to Make a Hot Honey Ground Beef Bowl

Here’s a step-by-step overview of the process. The full recipe instructions are in the recipe card at the bottom of the page.

  • Roast the sweet potatoes. Toss the cubed sweet potatoes with the oil and spices, then roast at 425ºF for about 25 minutes, or until tender and caramelized.
  • Cook the ground beef. Brown the beef in a skillet over medium-high heat, breaking it up as it cooks. Add the taco seasoning.
  • Add the sauce to the beef. Stir in the tomato sauce, then simmer for 2 to 3 minutes.
  • Assemble the bowls. Layer in the sweet potatoes, beef, cottage cheese, and avocado.
  • Finish with hot honey. Drizzle it over the top and serve.

Ground Beef Bowl Variations

Here are a few ideas for switching up this recipe.

  • Use another protein. Swap ground beef for ground turkey or chicken if you prefer a lighter option.
  • Try other veggies. Add roasted broccoli or cauliflower, winter squash, zucchini, whatever! You can add them in addition to or instead of the sweet potatoes.
  • Skip the cottage cheese. Use Greek yogurt or sour cream if you’re not a fan. Just note that the protein will go down.
  • Make your own hot honey. Just stir together honey and cayenne or sriracha, easy peasy! It’s not quite the same as store-bought, but it works in a pinch.

Meal Prep Storage

Store the sweet potatoes and ground beef in airtight containers in the refrigerator for up to 4 days. Reheat gently in the microwave or on the stovetop. Then, add the cottage cheese, avocado, and hot honey before serving.
