Cheesecake Cake Tips and Tricks
My cheesecake cakes combine two desserts, a layer of baked cheesecake paired with traditional cake layers. The creamy cheesecake with the tender cake and sweet frosting creates and incredible texture contrast.
Break these recipes up into two days for the best results. Make the cheesecake and cake layers one day. Freeze the fully-cooled cheesecake overnight and store the cooled, wrapped cakes at room temperature. The next day, prepare the frosting and assemble the cake.
Keep cheesecake cakes in an airtight container in the refrigerator for up to one week.
The bad news is there’s no way to fix cracked cheesecake. The much better news is that no one will see the crack. You’re going to hide it underneath layers of cake and frosting.
- Line the Springform pan. To keep the cheesecake from sticking to the pan, cut a piece of parchment into a circle that fits snugly over the bottom of the pan.
- Use an electric mixer. I used my stand mixer to combined the cheesecake ingredients well AND to ensure the frosting gets the ideal light, fluffy and creamy consistency that I love in a buttercream. Hand held beaters will work well too, if you don’t have a stand mixer.

- Level cake layers. I use Wilton Bake Even Cake Strips to make perfectly even cake layers, without having to shave off excess waste.
