What began nearly a decade ago in Alief as a small fruit trailer has entered an exciting new chapter: Gaspachos Mexican Bites, the concept known for its colorful Mexican fruit creations and street-style snacks, has just opened its first fast-casual restaurant space at 2103 Lyons Avenue, Suite 310, Houston Texas, 77020, marking a major milestone for founder Jennifer Perez and the Houston-born brand she built from the ground up.
The new restaurant represents the next evolution of the concept, having grown from a cart trailer to a remodeled, retired school bus, into multiple food trucks serving guests across Houston at destinations including Buffalo Bayou Park and Hermann Park, and later establishing a permanent kiosk at Levy Park before expanding to Lyons Avenue.
Perez launched Gaspachos in May of 2016 with a single trailer serving Gaspacho Moreliano, a vibrant fruit dish inspired by the flavors of her hometown in Michoacan, Mexico, featuring a colorful mix of mango, pineapple, watermelon, jicama, and cucumber, topped with fresh orange juice, Valentia sauce, Tajín, and cotija cheese. The signature dish quickly captured the attention of Houstonians, gaining demand across Greater Houston and being spotted at city parks, schools, and community events. In 2023, Gaspachos established a permanent kiosk at Levy Park, where it became a go-to stop for visitors, Upper Kirby District neighbors, and professionals.
Designed by Architangent, the space brings Jennifer’s creative vision to life, capturing the bold, energetic spirit of Mexican street-food culture. Taking inspiration from the surrounding neighborhood and the immersive, playful nature of the nearby Meow Wolf, the design features natural wood textures, vivid colors, neon accents, Equipale chairs sourced from Tequila, Jalisco, and colorful Acapulco chairs, bringing a lively, authentic celebration of Mexican street life indoors. At the center, a U-shaped, walk-up corner bar is the focal point of the restaurant, mirroring the street-facing bars found throughout Mexico, and is complemented by four televisions and a large screen, creating an inviting destination for movie showings, Loteria game nights, sports watch parties, and community events. With exposed beams, concrete flooring, mixed seating, and picnic tables with umbrellas inside the historic warehouse, along with vibrant displays of fresh produce and snacks, the design intentionally evokes the energy felt in a Mexican city.
The menu spotlights the fresh-fruit creations that made Gaspachos a Houston favorite, most recognizably the over-the-top fruit bowls dressed with chamoy and Tajín, as well as Tostilocos topped with meat or shrimp ceviche, and Krazy fruit creations such as Piña Loca, a pineapple hollowed out and filled with a chopped fruit mix, chamoy, Tajín, lime juice, and spicy and sweet candies. Complementing the signature fruit creations are savory street-style favorites, including street tacos with carnitas made Michoacán-style, al pastor, birria, and asada, Tortas, including Cubanas and Tortas Ahogadas inspired by Guadalajara, Jalisco.
The Lyons Avenue location introduces a flexible full-service bar program that leans into natural, fruit-infused beverages like Aguas Locas, the spiked version of an Agua Fresca made with tequila. Other spirited choices include Micheladas and Botaneras – Micheladas topped with ceviche, Margaritas, Mojitos, Mangonadas, snow cones, shaved ice, fresh juices, and other signature combinations that mirror items commonly seen at Mexican street markets, bringing cooling sips at the start of the Houston heat wave.
Families will find a kid-friendly menu with favorites such as quesadillas, hot dogs, and colorful candy-topped snow cones, making the restaurant a welcoming place for all ages.
“Opening this space is a meaningful reflection of how far we’ve come over the last 10 years,” said Jennifer Perez, founder of Gaspachos Mexican Bites. “We started with a simple idea to share the flavors we love from a small trailer. Seeing it grow into a place where people can enjoy the same treats I grew up with, and come together as a community, is a testament to passion, perseverance, and the support we’ve received along the way. It’s very special to me.”
A debut event offered the first glimpse into the next chapter of Gaspachos Mexican Bites, welcoming community members, family, and longtime supporters to the new space for an evening celebrating the concept’s evolution.
“Designing this space was about creating something that feels authentic to the energy and culture that inspired Gaspachos from the beginning,” said Brinn Miracle, founder of Architangent. “Seeing guests experience it for the first time on opening night was incredibly rewarding. Watching people gather, move throughout the space, and create memories together confirmed that we created exactly what we hoped for — a vibrant, welcoming environment that feels connected to community and full of life.”
The Lyons location is 2,514 square feet and is designed to seat up to 93 guests indoors, including bar seating. Guests will be able to enjoy the familiar ease of placing their order at the counter, from a kiosk, or via a QR code.
Gaspachos Mexican Bites at Lyons is open seven days per week, 11am-10pm, with some extended hours on select evenings following special events at Meow Wolf.
