Gingerbread Oatmeal Bake – Cozy Holiday Breakfast Recipe


This Gingerbread Oatmeal Bake is everything cozy winter mornings are made of. It’s warm, lightly sweet, filled with classic gingerbread spices, and baked until the edges are crisp while the center stays soft and comforting.

And like all of our favorite oatmeal bakes, it couldn’t be easier to make — just whisk your dry ingredients, whisk your wet ingredients, stir them together, fold in your mix-ins, and bake. It’s simple, seasonal, and perfect for winter meal prep or feeding a holiday crowd.

This oatmeal bake tastes like gingerbread “bread,” not a cookie — sweet enough to feel festive, but still balanced and breakfast-friendly. Serve it warm with yogurt, fruit, nut butter, or a dollop of whipped cream for the ultimate cozy treat.

  • Eggs or flax eggs — or use applesauce/banana for an egg-free version.
  • Milk of choice — dairy or nondairy.
  • Maple syrup — or honey, brown sugar, or coconut sugar.
  • Molasses — key for authentic gingerbread taste.
  • Butter or coconut oil — adds richness.
  • Vanilla extract — warm flavor boost.
  • Mix-ins — pecans, fruit, dried fruit, chocolate, etc.

How to Make Gingerbread Oatmeal Bake

1 Preheat the oven: Set to 350°F (180°C).

2 Mix dry ingredients: In one bowl, whisk rolled oats, cinnamon, ginger, nutmeg, cloves, allspice, baking powder, and salt.

3 Mix wet ingredients: In a separate bowl, whisk eggs (or applesauce/banana), milk, maple syrup, molasses, melted butter, and vanilla.

4 Combine: Add the dry ingredients to the wet and mix until fully combined.

5 Add mix-ins: Fold in nuts, fruit, or any mix-ins you like.

6 Bake: Spray an 8-inch round or 9×9-inch dish and pour in the mixture. Bake 35–45 minutes, until the edges are crisp and a knife inserted in the center comes out mostly clean.

7 Cool & serve: Cool at least 10 minutes, then serve warm with toppings of your choice.

Letting the oatmeal bake cool before slicing makes it much easier to serve!

For the best texture, don’t overbake — the center should be soft but not wet. If you use applesauce or banana instead of eggs, your bake will be slightly denser and softer, but still delicious. Mix-ins add great texture and variety, so feel free to use whatever you love: toasted pecans, dried cranberries, chopped apples, or chocolate chips.

Serving & Storage

Serve warm on its own, or with toppings like yogurt, fruit, whipped cream, or a drizzle of nut butter. It’s wonderfully festive for a winter breakfast or brunch spread.

Store leftovers in the fridge for 4–7 days. Reheat individual servings in the microwave for 60–90 seconds, or warm the whole dish in the oven for 15–20 minutes. This oatmeal bake also freezes well — freeze in portions or freeze the entire casserole in a freezer-safe container.
