Gingerbread is my recipe of the day with the blogging group Bread Bakers. We group together monthly to post on a common theme. This month our topic is dessert breads. Glad you could join us!

You may be familiar with gingerbread as cookies, which can be done in crisp, or chewy styles. These are a European tradition, especially in Sweden and also in Poland and Germany.
It’s believed to have been brought to Europe by monks in the Tenth Century and over time gained much popularity, to eventually becoming a Court favorite in Elizabethan times.
This version is more of a quick bread like a casual cake, which you may top with whipped cream, lemon curd, or vanilla custard, whichever you like. It’s often served at Christmas and gives a feel of British Christmas time, Dickens, and a Christmas Carol. It can make quick work of holiday dessert instead of a more elaborate and involved English pudding or fancy torte or layer cake.

Gingerbread
Gingerbread is an old-fashioned dessert bread made with ginger, spices, black treacle and golden syrup.
Wet ingredients:
- 1 large egg
- 1 teaspoon vanilla
- 1/4 cup of heavy cream
- 1/2 cup of butter melted and cooled
- 1/4 cup black treacle
- 1/4 cup of golden syrup
Dry ingredients:
- 1/4 cup candied ginger
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 tsp cinnamon
- 2 teaspoons ginger
- 1/2 teaspoon ground cloves
- 1-1/2 cups of all-purpose flour
Other:
- 1 cup prepared whipped cream
- nutmeg garnish optional

Preheat oven to 350° f.

Spray a 9-inch square baking pan with Baker’s Release spray.

Stir dry ingredients in a medium mixing bowl.

Stir wet ingredients separately in another bowl.

Gently combine wet and dry ingredients and spread in pan.

Bake for 30 minutes or until springy.

Cool then serve squares with whipped cream and nutmeg.
