I made this sorbet on a night when the temperature refused to drop below ninety and I wanted something that tasted cold even before I put it in the freezer. Green tea brewed and cooled, blended with cucumber, apple mint leaves, lime juice, and dehydrated cane juice until smooth. Churned in an ice cream maker and frozen for five hours.
The cucumber is what makes it different from every other sorbet. Peeled, chopped, and blended into the tea, it tastes clean and green and almost savoury beneath the sweetness. The mint is apple mint, which is softer and less aggressive than spearmint. One of my favorite summer sorbets to make.
Tips for Making Cucumber Mojito Sorbet
Chill the tea mixture before churning
Brew the green tea and let it cool to room temperature. Then refrigerate for at least four hours or overnight. A cold base churns faster and produces a smoother sorbet.
Blend the chilled tea with cucumber, mint, lime juice, and sweetener until completely smooth. No chunks.
Freeze for at least five hours after churning
The sorbet comes out of the machine soft. It needs five hours in the freezer to firm up enough to scoop.
Let it sit at room temperature for five minutes before scooping if it is too hard. Sorbet without dairy freezes harder than ice cream.

The cook time includes both simmering of your mixture and ice cream churn time.
If you are not able to find the cucumber mojito tea, you can come close to the flavors by using a green ice tea and increasing the amounts of cucumber, mint and lime zest.
