These healthy vegetarian Greek nachos use the layering style of traditional nachos while using fresh Mediterranean ingredients and warm spices like cumin, coriander, and paprika to create flavors similar to my Greek pita sandwich, which I recommend as a great alternative if you do not have the time to make this dish. 

I always serve platters like my loaded veggie nachos for informal dinners, as an entree for everyone to share. A Greek variation had been on my radar for a while, and it finally got its moment when my friend group threw a Mamma Mia-themed bridal shower for our bride-to-be. It was the perfect excuse to bring something festive and shareable to the table, that fit with all the other traditional dishes. And after a full evening of singing and living out our Dancing Queen dreams, the nacho platter was the first thing to disappear. 

Healthy vegetarian Greek nachos combines elements from 2 of my favorite cuisines and yields a fresh, fulfilling plant-based dish that can be served as an appetizer or a full meal. I add the chickpeas for plant protein and fiber, fresh vegetables for crunch and brightness, and a creamy tahini sauce to bring everything together. Just like traditional nachos, each layer works together, playing off the differing textures of the ingredients, making every bite captivating. And as a health coach, I love healthy meals that get people genuinely excited.

But I have always found the opposite to be true. Mediterranean dishes have a huge focus on vibrant and simple flavors, using fresh fruit, vegetables, and grains. And unlike some cuisines where I find my recipes reliant on meat alternatives or substitutes to mimic authenticity, my Greek-themed dinners have never needed that.

🥘 Ingredients

For these healthy vegetarian Greek nachos, I use a mix of pantry staples and fresh produce to build my layers of flavor. This is everything I use:

Chickpeas: I use canned chickpeas for convenience, which I have rinsed and drained. 

Olive oil: I cook the aromatics and chickpeas in olive oil for a rich base flavor.

Aromatics: Chopped onion and garlic build the savory foundation for the chickpeas.

Spices: I use cumin, coriander, paprika, cayenne, salt, and pepper to create an authentic flavor profile.

Vegetable broth: Chickpeas get braised in vegetable broth for a tender and tasty end result. 

Tomatoes and cucumber: Fresh diced tomatoes and cucumber provide a juicy topping that contrasts with the warm chickpeas. 

Lemon: I add fresh lemon juice to lift the relish and the sauce.

Yogurt: I mix this into the tahini sauce for a creamy texture.

Tahini: This adds richness and a distinctive flavor that pairs well with the chickpeas. 

Pita bread: I cut a whole pita into wedges and bake them until crisp. Alternatively, you could make chips using my vegan flatbread, too. 

🔪 How To Make

I prepare each layer of these healthy vegetarian Greek nachos separately, before bringing them all together. This is how I do it: 

Cook aromatics and spices: First, I preheat the oven to 375F. Then, in the Dutch oven or heavy pan, I heat the oil, add the onion, and cook for 5 minutes before adding the garlic. Next, I add my spices and cook for 1 minute.

Add broth and chickpeas: I add the chickpeas to the Dutch oven along with 1 1/2 cups broth, bring the mixture to a boil, replace the lid, and move to the oven to bake.

Dice vegetables: While the chickpeas bake, I dice my cucumber and tomato. Next, toss with olive oil, salt, pepper, and lemon juice. 

Prepare sauce: Next, I combine the yogurt, tahini, garlic, salt, pepper, and lemon juice to create a smooth, thin sauce.

Bake pita chips: I cut the pita bread into small wedges, spray with olive oil, place on a baking sheet, and bake for 10 minutes until brown and crisp.

Assemble nachos: Once everything is finished cooking or being prepared, I assemble the nachos. I start with a layer of the pita chips, followed by the baked chickpeas, then the tomato and cucumber relish, and finish off with the yogurt tahini sauce.

My #1 Secret Tip for this healthy vegetarian Greek nachos recipe is to keep each part of the dish separate until serving. I never assemble these nachos ahead of time, as this may cause the pita chips to become soggy. And if possible, I recommend tossing the relish in the olive oil, lemon juice, and seasoning just before serving to avoid the mixture from becoming soft and watery. 

Other Tips To Keep In Mind:

  • Dry and dehusk chickpeas: Before adding to the Dutch oven, I rinse my chickpeas in a bowl of water, making sure to rub them with my hands, loosening the outer husk. I pat the chickpeas dry after rinsing, which allows them to better absorb the spices.
  • Cut into uniform pieces: I keep the shape and size of my pita chips similar, so they bake at the same rate.
  • Serve chickpeas warm: For this dish, I recommend serving the chickpeas warm and keeping the topping cool or at room temperature for a contrast.
  • Thin sauce slowly: Add the ingredients of the sauce to the tahini slowly. If I add it all at once, the tahini may seize up and become thick. If the sauce is not thin enough, loosen it up with a trickle of water. 

📖 Variations

I have tried a few variations of these healthy vegetarian Greek nachos, working with what I have in my kitchen, or whatever I feel like adding. These are 3 variations I love:

Feta addition: For a salty finish, I sprinkle 1/2 cup of crumbled feta over the top of the nachos. Or if I have enough time, I serve these nachos with a bowl of whipped feta, and let everyone spoon some over their own portion. To make this, I use one 8-oz block of feta, 1/2 cup Greek yogurt, 1 tablespoon lemon juice, 2 tablespoons olive oil, and 1 small clove of garlic. I blend the ingredients until smooth and fluffy with a pinch of dill for flavor.

Olive mix: I love olives and cannot resist adding them to any dish, and they work very well in these nachos. I add 1/3 cup sliced kalamata olives for a briny flavor that I am obsessed with. 

Vegan swap: I use 1/2 cup plant-based yogurt in the sauce to keep the recipe completely dairy-free. And if you are not a fan of tahini, you can use my vegan tzatziki instead for an alternative but still traditional sauce. 

🍽 Serving Suggestions

These healthy vegetarian Greek nachos go very well with other classic sides like my Greek vegan spanakopita or my Greek fries. In my house, sometimes we stick to one continent, and other times we like creating a fusion of flavors. The first few times I made this for my kids, they had a hard time accepting that any kind of nacho dish would be devoid of cheese and guacamole, and that was when we started experimenting with toppings and sauces. A dollop of my edamame guacamole and a drizzle of vegan nacho cheese sauce actually tastes quite delicious. My kids have already said that next time they have these nachos, they want to try them with my vegan sour cream. 

🧊 Storing And ♨️ Reheating

Refrigeration: I store each part of these Greek nachos separately in airtight containers in the fridge for up to 4 days.

Freezing: This recipe is suitable for freezing, as the vegetables and pita do not hold their texture well once thawed.

Reheating: I reheat the chickpeas in a pan or the microwave, and assemble the nachos fresh with toppings and pita chips.

Why do I have to cook the chickpeas in the oven instead of finishing them on the stove?

Baking the chickpeas in a Dutch oven after bringing them to a boil on the stovetop is a key step in transforming them into a tender and flavorful component. If I just used the stove, the heat would surround the pot from the base only, meaning the chickpeas would cook unevenly, with not much opportunity for the spices to truly infuse into them. In the oven, the low heat surrounds the dish from all sides, allowing the chickpeas to braise in the spiced broth mixture, resulting in incomparable taste and tenderness.

What causes my tahini sauce to become thick and clumpy?

Tahini can behave in odd ways, which can happen depending on how it is treated and what it has been mixed with. When you first mix a liquid like lemon juice with tahini, it actually thickens up and becomes thicker. This is a normal chemical reaction that used to catch me off guard often. The way I work through this is by adding liquid a little at a time and stirring continuously. Eventually, the sauce loosens up and becomes smooth and creamy. If the sauce is still too thick even after all the ingredients are added, I recommend stirring through a tablespoon of water to thin it to a drizzling consistency.

How do I keep the cucumber and tomato relish from making everything watery?

Fresh tomatoes and cucumbers release a significant amount of liquid, especially once they have been cut and seasoned. The longer the relish sits, the more liquid pools at the bottom of the bowl. To manage this, I recommend removing the seeds and pulp from the tomatoes before dicing. For the cucumbers, I like to degorge them in a colander with salt for 10-15 minutes to draw out liquid. Just make sure to pat them dry before adding to the relish. I also recommend dressing the relish right before assembling instead of letting the vegetables marinate for a long time.

  • First, heat oven to 375°F. In a large, oven-safe heavy pot such as a Dutch oven, heat olive oil in the bottom of the pan over medium-high heat.

  • Add onions and cook for five minutes, until they begin to soften. Add garlic and saute for 5 minutes, until everything is wilted.

  • Add cumin, coriander, paprika, cayenne and salt, and cook for one minute. Add canned chickpeas and 1.5 cups broth. Bring mixture to a boil and boil for one full minute. P

  • Place a lid on the pot and transfer it carefully to the oven.

  • Bake chickpeas for 25 minutes.

  • Dice your tomatoes, cucumbers, and onion and toss with 1 teaspoon olive oil, salt, pepper and lemon juice to taste.

  • Make your yogurt / tahini sauce by combining 1 cup yogurt, ¼ cup tahini, 1 clove garlic, salt, pepper and lemon juice to taste — thin out the sauce with 1-3 tbsp water as neededn.

  • Meanwhile, bake your pita chips: Cut the pitas into chip-size wedges. Arrange on a large baking sheet and spray with olive oil cooking spray, sprinkle with salt.

  • Bake at 375 degrees for 10 minutes or until crispy and golden brown.

  • Assemble! Top the pita chips (use pita chips made from ½ of a whole wheat pita) with 1/8 of the chickpea mixture, ½ to 1 cup of the tomato mixture and a few tablespoons of the yogurt sauce.
