I know there are plenty of raisin haters out there. Personally I love my oatmeal raisin cookies, but if you prefer you could bake my oatmeal chocolate chip cookies instead.

Making cookie bars totally simplifies the process and time in the kitchen. Using melted butter and dark brown sugar creates a deep caramel flavor and keeps these cookie bars soft and chewy for days!

Here are a few notes about some of the ingredients I use to make these cookies.

  • Dark Brown Sugar- I choose to use dark brown instead of light brown sugar to add the deep molasses, caramel flavor to the base of this cookie.
  • Old-Fashioned Oats- choose the classic oatmeal instead of quick oats or steel cut oats which would result in a different texture.
  • Cornstarch- the addition of cornstarch is a small but important detail. Adding cornstarch keeps the bars tender for days instead of drying out like some cookie bars.

Recipe Tips and Tricks

  • Use fresh raisins for best flavor and results. Soak in warm water if you want them a little plumper.
  • Line to baking pan with parchment paper for easy removal.
  • Don’t overbake. The edges and top should be lightly golden brown.
  • Don’t skip the powdered sugar topping. Adds the perfect sweetness!
  • Cool cookie bars completely before cooling.

Oatmeal Raisin Cookie Bars Recipe

Ingredients

  • 1 cup unsalted butter, melted
  • 1 ½ cups dark brown sugar, packed
  • 2 large eggs
  • 2 teaspoons pure vanilla extract
  • 1 ¾ cup all-purpose flour
  • 2 teaspoons cinnamon
  • ¼ teaspoon ground nutmeg
  • 1 teaspoon baking soda
  • 1 teaspoon kosher salt
  • 1 Tablespoon cornstarch
  • 3 cups old fashioned oats
  • 2 cups raisins
  • 2 teaspoons powdered sugar, optional topping

Instructions

  • Preheat oven to 350 degrees F. Line a 13×9 baking dish with parchment paper and set it aside.
  • In a mixing bowl, beat melted butter with dark brown sugar for 2 minutes. Add in eggs and vanilla extract and beat an additional minute, scraping down the sides of the bowl as needed.
  • To the bowl, add flour, cinnamon, nutmeg, baking soda, kosher salt, and cornstarch. Mix on low just until combined.
  • Add in the oats and raisins. Mix until blended. Pour batter into the prepared baking dish.
  • Bake in a preheated oven for 25-28 minutes, until the edges are lightly browned. Remove from the oven and cool completely before cutting into bars.
  • If desired, sprinkle cooled cookie bars with a light dusting of powdered sugar.

Notes

  • Oats- Use old fashioned oats for best flavor and texture. Don’t swap for quick oats or steel cut oats.
  • Raisins- For best results, use fresh raisins. Golden raisins are also delicious. For plump raisins, soak in warm water while you make the cookie dough. Drain and fold into the batter.
  • Storage- keep bars in an airtight container at room temperature for up to one week. Or freeze for up to 3 months.
