Burgers So Good I Might Never Go Back to the Classic Sandwich


Why yes, I do have an obsession with all things BLT, thank you for noticing.
From this hearty BLT panzanella salad to this bacon and tomato-studded corn salad to this utterly delicious BLT-inspired pasta salad, I’m hard pressed to think of a single dish that wouldn’t be improved with the addition of juicy tomato, salty bacon, crisp lettuce, and a schmear of mayo.
I never thought another sandwich could dethrone my favorite BLT, but these burgers with bacon-infused patties on sesame buns piled high with tomato slices and lettuce might have to replace my go-to lunchtime sandwich.
Who am I kidding? There’s room in my heart (and stomach) for both once summer’s vine-ripened tomatoes start filling my produce drawer.

What’s in This Recipe?

- Ground beef — My favorite to use in burgers is 80% lean ground chuck. Burger patties need some fat to prevent them from drying out on the grill. Not to mention fat = flavor!
- Bacon — I used thick-cut bacon, but any type of bacon may be used.
- Black pepper — Bacon is already very salty, and since we’ll be grinding it up and mixing it with the beef to make bacon burger patties we don’t need to add extra salt to the mix.
- Burger buns — Sturdy sesame seed buns are my preference here, but you may use any you like (including GF).
- Toppings — Good quality mayonnaise, juicy tomato slices, and crisp lettuce leaves round out the classic BLT flavors in these burgers.
How to Make BLT Burgers on the Grill


- Freeze the bacon before chopping. Just 15 minutes in the freezer makes the bacon easier to chop into a fine grind using a food processor.


- Make the patties. After mixing the ground beef and finely chopped bacon, the burger mixture gets hit with freshly ground black pepper. I’ve experimented with other seasonings like pre-made burger rubs, garlic, etc. but adding too much to the burger mixture overpowers the bacon and ground beef.

Ingredients
- 12 ounces sliced bacon (any kind)
- 12 ounces ground chuck , 80% lean
- ½ teaspoon freshly ground black pepper
- 4 sesame seed buns , split
- 4 tablespoons mayonnaise
- 2 large tomatoes , thickly sliced
- 4 large leaves iceberg lettuce
Instructions

Grind the bacon in a food processor, then combine with ground beef. Freeze 12 ounces sliced bacon for 15 minutes or until firm. Roughly chop the bacon into chunks, then add to the bowl of a food processor. Pulse the bacon until ground. Transfer to a mixing bowl, then add 12 ounces ground chuck, and mix with your hands until combined.

Make the patties. Shape the bacon/beef mixture into four patties of equal size, about ¾ inch thick. Season with ½ teaspoon freshly ground black pepper and refrigerate the patties until ready to grill.

Grill the burgers. Prepare the grill for direct cooking over medium-high (450°F) and brush the cooking grates clean. Grill the patties with the lid closed until cooked to medium doneness (160°F), 8 to 10 minutes, turning once. During the last 30 seconds to 1 minute of grilling time, toast 4 hamburger buns, cut side down, over direct heat. Remove from the grill.

Build the burgers. Layer both sides of the toasted bun with a slather of mayo, a bacon patty, thick-sliced tomato, and lettuce.
Notes
Storage: Leftover burger fixings should be stored in separate airtight containers and refrigerated for up to 4 days. The bacon patties can be shaped and frozen for up to 3 months, then grilled later. (Thaw completely in the fridge before grilling.)
