Bacon Blue Cheese and Tomato Salad is my recipe of the day with the blogging group From Our Dinner Table. We group weekly to post new recipes on a variety of common topics. This week we’re featuring our best bacon recipes. Glad you could join us!

This tasty and refreshing tomato salad is easy to make. It features grape tomatoes, bacon, pecans, bleu cheese, scallions, and a nice homemade vinaigrette dressing.
Fortunately, good grape tomatoes are available year-round these days, so you’re not limited to summer to serve this. If you’re not a fan of bleu cheese, you could sub goat cheese crumbles or small cubes of cheddar or gouda.
As I noted up front, this would also make a great topping on a wedge salad. Another idea is to toss with some spring spring greens if you’d like lettuce with it. Any way you serve it, this is a delicious and versatile salad.

Bacon Blue Cheese and Tomato Salad
Bacon Blue Cheese and Tomato Salad, a variation on a traditional tomato salad, also can be used as a topping for an iceberg wedge salad.
Dressing:
- 1 tablespoon white balsamic vinegar
- 1 tablespoon olive oil
- 1 teaspoon granulated sugar
- 1/8 teaspoon salt
- 1/8 teaspoon black pepper
- 1/8 teaspoon dry mustard
Salad:
- 1 pint grape tomatoes halved
- 1/4 cup thinly sliced scallions
- 1/4 cup chopped toasted pecans
- 1/4 cup blue cheese crumbles
- 4 slices bacon cooked crisp and crumbled

Whisk dressing and toss with tomatoes and scallions.

Chill one hour.

Mix in bacon, pecans and blue cheese just before serving.
