Za’atar Grilled Chicken – {Juicy & Easy}


This Za’atar Grilled Chicken uses a quick yogurt marinade to add plenty of lemony, garlicky flavor and warm, earthy za’atar to every bite! It needs just 30-60 minutes to marinate and about 10-12 minutes on the grill.

If you’ve made my High Protein Fattoush Salad, you’ll recognize this chicken! I loved the za’atar-marinated chicken in that salad so much that I wanted a standalone recipe for it because there are so many other ways to serve it!

The marinade is made with Greek yogurt, lemon juice and zest, garlic, olive oil, za’atar, and a little red pepper for heat. After a quick rest in the fridge, the chicken goes straight onto the grill and comes off juicy with lightly charred edges and plenty of herby, lemony flavor.

I make this a lot during grilling season because it works with whatever type of dinner I’m in the mood for. Slice it over a salad, stuff it into pita with hummus and vegetables, add it to a grain bowl, or serve it with a few easy Mediterranean sides!

Stir together the Greek yogurt, olive oil, lemon juice and zest, garlic, za’atar, kosher salt, black pepper, and red pepper flakes in a large bowl or Ziploc bag.

Mix until the marinade is smooth and the spices are evenly distributed.

2. Marinate the Chicken

Add the chicken to the mixture and turn each piece until it’s evenly coated.

Refrigerate for 30-60 minutes.

3. Grill the Chicken

Remove the chicken from the marinade and let the excess drip off.

Grill for about 5-6 minutes per side, adjusting the time based on the thickness of the chicken, until cooked through.

Pro tip: Check thicker pieces separately instead of relying only on the clock. Chicken breasts can vary quite a bit in size.

4. Let It Rest

Transfer the grilled chicken to a clean plate or cutting board and let it rest for 5-10 minutes before slicing.
